Does anyone make this dish? My grandma always made it, still does sometimes, and I recently mastered it. It's sooooo good and easy, and very healthy. 1. Heat some ex. virgin olive oil in a skilled; add minced garlic, or crush 2 cloves and add. 2. Slice long (Italian style) 1 green, 1 red, 1 orange, and 1 long green hungarian pepper. Use the ones you like that taste the best, but I like em hot!
3. Sautee the peppers, adding a little more oil and salt them. Cover with lid. 4. Once they're soft, crack 6-8 eggs in and jack that heat up for like a minute. 5. Lower the heat to medium, folding and scrambling the eggs in the skillet. You're done! Serve on warm, thick Italian bread, a roll, or eat plain. Delish as a sandwich but also on it's own!
