My aunts co worker makes this awesome red velvet cake, but she's in alabama and we're in colorado[:'(], that cake is soooo delicious, but i'm wondering if anyone knows what the procedure to mail a cake is so it's still relatively fresh and not super smashed up. Thanks

I sure do!  I do it with boxed cake mixes so I will tell you what I do for that and you can adjust it.  I send these "jar cakes" to my brother in law and sister in law while they're deployed in Iraq.  I mix any cake mix as directed.  Then you need about 5 wide mouth pint jars...spray with non stick cooking spray.  Fill jars about 1/3 full with batter.  Bake jar cakes on a cookie sheet until done ... I watch them closely til sides start to pull away and a tooth pick inserted comes out clean.  Take them out of the oven and using the hot pad put lids and rims on each jar and screw shut...doesn't need to be super tight but should be hand tight.  ( Cakes should not rise above rims...if they do carefully cut the top part of the cake off so it is about 1/2 inch below rim before putting lids on) As the jars cool the cakes will seal just like when you can veges or something similar.  Jar cakes have a six month shelf life...if frozen they can last 12 months...I just send an unopened store bought frosting with.  Hope that helps!
