Just a thought...I noticed that the longer I have had my eggs, the higher the ph. So, let say I buy them and then in 2 weeks I use them for SU, the ph goes up alot. But, If I buy the eggs, then use them within a couple of days the ph is too low. So, I have learned...the older the better and I don't mean expired, just sitting in the fridge for a couple of weeks. Then I take them out and leave them out all day and it seems to be perfect!!!
