I need some good eggless/ nutless holiday recipes!

I just don't understand how these days you can't find a decent recipe without these ingredients??? Confused Huh?Mad Furious  I mean am I the only mom with food allergies in her house? 

I am looking for a great sugar cookie recipe without egg.  I have tried a bunch off the internet and they stink! Yuck  I want first hand experiences here.  If you use a sugar cookies recipe without egg...DISH!  I just bought the kids these really cute baking sets from target and they have their own rolling pin, whisk, spoons and cookie cutters.  They want to get cracking already...LOL

I am also looking for any pies or cakes that don't have either ingredient!

What about an easy Caramel Truffle recipe?!?! 

26 caramels, 1 cup milk chocolate chips, 1/4 cup heavy whipping cream

Line an 8-in square dish w/ plastic wrap; in a micro-safe bowl, combine above ingredients.  Microwave 1 min, addtl 15 min unticl smooth.  Spread into prepared dish; refridgerate for 45 min or until firm.

Lift candy out of pan.  Cut into 30 pieces; roll each piece into a 1-in. bowl.  Cover & refrigerate for 45 min or until firm.

1-1/3 cups semisweet chocolate chips, 1 tbsp shortening

In micro-safe bowl, melt semi-sweet chips & shortening; stir until smooth.  Dep caramels in chocolate; allow excess to drip off.  Place on waxed paper; let stand until set.  Refrigerate until firm.

Yiel 2-1/2 Dozen

THESE ARE EASY TO DO AND ARE EVEN BETTER THAN MY OLD RECIPE OVER THE STOVE!!!  YOU COULD DO THESE WITH THE KIDS TOO.... THEY WILL LOVE TO STIR, ROLL UP THE BALLS & DIP IN CHOCOLATE!!!

Just for prettiness I melted some white chocolate, put in ziplock bag, cut a tiny piece of edge and decorated the top!!!

Russian Tea Cookies

I make these all the time and they are great. The base is like a sugar cookie so I guess you could put frosting on them instead of the fruit preserves. They are very light.

 

1 C. salted butter

1/2 C. confectioner's sugar

2 tsp. pure vanilla extract

2.C  all purpose flour

1/4 tsp salt

 

Topping

1/2 cup fruit preserves

1/4 c confectioner's sugar

 

Preheat oven to 325 F

In a large bowl cream butter and sugar using and electric mixer. Add vanilla , scraping down bowl as needed. Blend in flour and salt mixing until thoroughly combined .

Roll tablespoons of dough balls on a lightly greased cookie sheet about and inch apart. Press down the center of each ball with a spoon , forming a depression . Fill each with a tsp of preserves

Bake 15-20 min., or until golden. Transfer immediately to a cool flat surface. When cookies are cool dust with confectioners sugar.

I have an anaphyllactic allergy to eggs and am a Christmas Baker EXTRORDINAIRE.  Here is my secret.......

1 Egg = 2 Tbs. flour
            ½ tsp. oil or 1/2 tbsp shortening
            ½ tsp. baking powder
            2 Tbs. liquid

This substitute will work in any cookie or cake recipe.  Happy Baking Happy  LOL
